Fluffy Pavlova

This light and fluffy dessert is a staple of Australian cuisine. To make a pavlova, you’ll need:

  • 4 egg whites
  • 1 cup of sugar
  • 1 tsp of cornflour
  • 1 tsp of white vinegar
  • 1 tsp of vanilla extract

Preheat your oven to 150C. In a large bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, cornflour, vinegar, and vanilla extract, and continue beating until the mixture is glossy and stiff. Place spoonfuls of the mixture onto a baking tray lined with parchment paper, and shape into a circle or oval. Bake for 1 hour, or until the pavlova is crisp on the outside and soft on the inside. Once it’s cooled, top with whipped cream and your choice of fruit.

Make this easier with an electric mixer from Kitchen Warehouse.

Homemade Lamingtons

These delicious squares of cake coated in chocolate and coconut are a classic Australian treat. To make lamingtons, you’ll need:

  • 1 cup of butter, softened
  • 1 cup of sugar
  • 4 eggs
  • 2 cups of self-raising flour
  • 1 tsp of vanilla extract
  • 2 cups of desiccated coconut
  • 1 cup of icing sugar
  • 1 cup of cocoa powder
  • 1/2 cup of milk

Preheat your oven to 180C. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the flour and vanilla extract. Pour the mixture into a greased 9×13 inch baking pan, and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely. Cut the cake into small squares. In a bowl, mix together the icing sugar, cocoa powder, and milk until smooth. Dip each square of cake into the chocolate mixture, then roll in the coconut. Allow the lamingtons to set before serving. Enjoy!

Refresh your BBQ

While everyone is focused on enduring this cold, gloomy weather, look to the future and plan to make your next Summer something spectacular. How is the old BBQ? Has she seen better days? Would dad love a new BBQ (hint: he probably does)? There are plenty of great deals on BBQs in Winter. It is the perfect time to upgrade.

Serving Size

When considering a new BBQ purchase it is very important to consider how many people you plan on serving. A two burner BBQ would be suitable to cook for your small family of 4 – 6 people, however you may need to go larger if your get togethers call for it. Also, a big BBQ is a fantastic conversation piece. (Let those neighbours know who’s boss).

Portability

Not all Australian gatherings take place at home which is why its important to plan for those Aussie outback camping cookouts. If you are the type to travel regularly then maybe a portable BBQ is for you. Portable BBQs are also fantastic for smaller homes and balconies.
On the flip side if you only plan to entertain at home a built-in BBQ is ideal and can even be plumbed directly into your gas lines.
